GRAIN FREE SPANISH RICE
1 cup cauliflower rice (breakdown florets in food processor or blender until it resembles rice.)
4-6 oz. tomato sauce (home made or canned)
4-6 oz. broth (your favorite store bought or homemade)
1 tsp. garlic powder
1 tsp. Himalayan salt
In a sauce pan over medium heat drizzle some olive oil. Once it is warm add the cup of cauliflower rice and chopped onions, mix until lightly browned. Add the tomato sauce, broth, garlic powder, salt, cilantro, and celery. Heat over medium to medium low until liquid evaporates, and there you go with a delicious grain free Spanish rice. I love to top it off with some fresh chopped cilantro once it is done.
