I have tried baking cookies with coconut flour but they end up too dense for my taste. Almond flour works great but I am not always in the mood for it. Plus some of my friends have food allergies they can not have almond cookies. The cookies I baked today came out delicious! Chocolate was a bit bitter for my taste, maybe because I love milk chocolate and used dark chocolate. (70% cocoa) I admit I was afraid of trying this chickpea flour, but I am happy to say I loved it and can't wait to try some new recipes with it.
GRAIN-FREE CHOCOLATE CHIP COOKIES
(approximately 2 doz)
2 cups chickpea flour (garbanzo bean flour)
1 tbs. baking powder
1 tsp. psyllium husk (fiber, will be fine without)
1 cup unsweetened applesauce
1 tbs. liquid stevia
1 tsp. vanilla
1-2 cups dark chocolate chips
Mix flour, baking powder and psyllium husk in a medium size bowl. In a separate bowl mix applesauce, liquid stevia, vanilla and two eggs. Combine liquid mixture with the dry mixture and finally add the chocolate chips. I used a 1/8 measuring cup to scoop out cookies dough to keep them approximately the same size. Lightly press and shape as these will not melt due to lack of fat (butter). They will pretty much keep the shape you bake them. Preheat oven at 375 degrees for 10-15 minutes.
Hope you give these cookies a chance! Do not fear the chickpea flour. Consistency was bread like and soft without the grainy texture from nut flours.
