For me eating grain free is not always easy but it is easier than being a vegetarian as I love steak. I tend to play around with different nut flours in hopes of finding a more bread like alternative. I have previously shared my attempt with cauliflower biscuits and they are good but not very bread like. These how ever do have a more bread like texture, which I love.
1/8 cup hazelnut flour +1 tablespoon
1/8 cup chickpea flour (garbanzo bean)
2 tbs coconut flour
1 tsp baking powder
1/4 tsp garlic powder
1/4 cup shredded Parmesan cheese
1/4 cup heavy cream
1/2 cup shredded sharp cheddar cheese
2 tbs ghee butter (I made my own)
(extra butter and dried parsley to finish off biscuits)
Note: Hazelnut flour can be substituted for any other nut flour. You can make your own by adding dry nuts in blender or food processor until it forms a powder.
Heavy cream can be substituted with Coconut cream, Sour cream, or Greek yogurt.
Egg can be substituted by your choice of egg replacement.
Add all dry ingredients in a medium bowl and mix with a spatula. Next add all other ingredients mix until all ingredients are well blended. Evenly scoop out mix and place on a cookie sheet lined with parchment paper. Bake at 350 degrees for about 10-15 minutes or until lightly browned. Once they are done brush some butter on top of each biscuit and sprinkle some dried parsley leaves. Hope you and your family enjoy these as much as we did.
